Red Hawk Cheese

 

Red Hawk Cheese, from Cowgirl Creamery in Marin County is an aged, triple-crème, cow’s milk cheese with a brine-washed rind. The brine wash encourages the development of the red-orange hue for which the cheese is named. The milk for this award-winning cheeese (“Best in Show” at the 20th annual conference of the American Cheese Society) comes from nearby Straus Family Creamery.
