Cowgirl Creamery influenced an entire generation of cheese makers in Marin County. Using organic milk from nearby Straus Family Creamery. Cowgirl’s extraordinary Red Hawk Cheese is an aged, triple-crème, cow’s milk cheese with a brine-washed rind. The brine wash encourages the development of the red-orange hue for which the cheese is named. Red Hawk cheese was awarded “Best in Show” at the 20th annual conference of the American Cheese Society.
