Red Hawk Cheese is an aged, triple-crème, cow’s milk cheese with a brine-washed rind. It was created by Cowgirl Creamery in Point Reyes Station California, a company that crafts their artisanal cheeses using organic milk from nearby Straus Family Creamery.
The brine wash encourages the development of the red-orange rind for which it is named. Red Hawk cheese was awarded “Best in Show” at the 20th annual conference of the American Cheese Society.
