Spirit Works Distillery in Sebastopol has released its first-ever Bottled in Bond – Straight Rye Whiskey, meeting the strict guidelines for the rare “Bottled in Bond” label.
Among other requirements that a spirit must meet in order to be labeled Bottled in Bond is that it must be produced from the same class of spirits and materials (in this case, rye berries and rye whiskey); distilled in the same distilling season by the same distiller at the same distillery; stored for at least four years in direct contact with wood; void of any addition, subtraction, or modification; proofed to 100 proof with only pure water; and bottled at 100 proof.
Spirit Works Distillery’s Bottled in Bond – Straight Rye Whiskey was bottled at four years two months old and 100 proof. It offers both bright and baked apple notes on the nose, followed by hints of coffee and leather. On the palate it brings peppery notes of clove and nutmeg into play as well as caramel and toasted coconut.
Bottles are on sale at the distillery tasting room in Sebastopol, in western Sonoma County, and plans are to have them on the market in due course. Founded in 2012 by husband-and-wife team Timo and Ashby Marshall, Spirit Works Distillery handcrafts artisan spirits onsite using hands-on, grain-to-glass methods.
