The spectacularly complex artisan vinegars from Chaparral Gardens start with hand-picked fruits, herbs, and vegetables grown on an organic farm. The fruits and herbs are then placed in small vats along with an organic base vinegar. The “Mother” is addedm and the infusion undergoes a “mild” fermentation process that can take several months.
The result is a line of vinegars that absolutely scintillate with subtle flavors and intriguing hints of spice. These vinegars are superb in salads, magnificent in marinades and can be easily reduced into glorious glazes.
