Chef Alan Kantor is the Executive Chef at MacCallum House, a charming little Inn in the town of Mendocino. Kantor keeps a local food-shed map framed in the foyer of his restaurant and for years he maintained a pioneering website that served as a valuable resource for California chefs, locavores, and the first generation of farm-to-table enthusiasts who began to reconnect with time-honored culinary traditions and celebrate local farms, fisheries and foragers.
Chef Kantor continues to source nearly all his ingredients locally, crafting in-house breads, pastas, smoked meats and s variety of pickles and ferments. Each fall the restaurant also features a popular Wild Mushroom Winemaker Dinner offering up a six-course menu in honor of Mendocino’s wonderful wild mushrooms.
Appearing regularly at the annual dinner are local mushroom maven Eric Schramm and area winemaker Greg Graziano. Schramm shares mushroom facts and tales and Graziano selects from his best vintages to complement each earthy course.
