A triple-crème, aged, cow’s milk cheese with a brine-washed rind, Red Hawk (above) was created by the Cowgirl Creamery in Point Reyes Station, California. The brine wash encourages the development of the red-orange rind that gives the cheese its name. The Cowgirl Creamery crafts their own artisanal cheeses using organic milk from nearby Straus Family Creamery. This cheese was awarded “Best in Show” at the 20th annual conference of the American Cheese Society.
