An aged, triple-crème, cow’s milk cheese with a brine-washed rind, Red Hawk Cheese was created by Cowgirl Creamery in Point Reyes Station, California. The brine wash encourages the development of the red-orange rind for which it is named. Cowgirl Creamery crafts their own artisanal cheeses using organic milk from nearby Straus Family Creamery. Red Hawk was awarded “Best in Show” at the 20th annual conference of the American Cheese Society.
