The Oysters Bingo here are Chef Pawlcyn’s rift on Oysters Rockefeller. The beautiful bivalves are topped with spinach, asiago cheese, garlic, and cognac and then broiled briefly before coming to your table lightly browned and still sizzling from the broiler to be paired with some crisp Chardonnay.
