Chef Alan Kantor, the Executive Chef at MacCallum House, a charming little Inn in the town of Mendocino, has a local food-shed map framed in the foyer of his restaurant. For years, Kantor maintained a website that served as a valuable resource for those who sought to make a culinary connection with area farms, fisheries and foragers.
Kantor still sources nearly all his ingredients locally, crafting in-house breads, pastas, smoked meats and ferments. Each fall the restaurant at the Inn offers a popular Wild Mushroom Winemaker Dinner offering a six-course menu celebrating the abundance of area mushrooms.
Appearing regularly at the annual event is Mendocino’s resident mushroom maven Eric Schramm to offer his insights on gathering area mushrooms. Meanwhile, local winemaker Greg Graziano selects from his best wines to match each course.
